Once in a while when curing salmon fillets for canapes, as you do, we’re left with trimmings and a predicament. What do do? One answer is simple and delicious.
With the trimmings, combine 6 tablespoons of Mirin, 9 of Soy Sauce and 3 of Honey along with a handful of Star Anise.
Slosh over the salmon and let marinade for 1 hour or so.
Get the oven nice and hot, about 200 Celsius. Lay the salmon in a shallow roasting dish and roast for 15 mins, with the marinade poured over for the last 5 minutes. When cooked, remove the salmon from the sauce, sprinkle with some black sesame seeds and serve with plain rice, noodles or a shaved cucumber salad, or let cool and flake into sour cream and cream cheese for a light salmon pate.
