Maple Syrup Clotted Cream Ice Cream

It’s not just the title of this weeks blog that’s a mouthful, wait until you try this simple, no fuss ice cream. I’m not prone to hyperbole but this will change your life. For real.

All you need is clotted cream, I used a 1 kg tub, and 500 ml of maple syrup. Whip the clotted cream, it will lose it’s thick texture, then add the maple syrup, as much or as little as you want, until the cream begins to resemble the original consistency.

Transfer to a plastic container, I used the one the clotted cream came in, and pop into the freezer until frozen, at least 3 hours. Make sure it’s well wrapped in clingfilm, important to stop ice-crystals.

If you can’t wait the 3 hours, and trust me it’ll be hard to do once you lick a spoon, just pop into little glasses or espresso cups and chill. Perfect as a rich after dinner pick me up, perhaps with an espresso, some biscotti and a dessert wine. Hell lick it off a loved one.
