Stalwart of an Italian meal, this delicious digestif ranges from the sublime ( this one) to the ridiculous ( those lurid touristy bottles).

Any grain alcohol will suffice to produce a smooth and punchy limoncello, we use vodka- obviously the better you use the better your limoncello.

For 700ml of vodka, use the peeled rind of 3-4 unwaxed lemons, and simply steep the peel in the vodka for 7-10 days. It should turn a very faint lemony colour and smell.

Discard the peel. Retain the vodka.

Mix lemon puree or juice with simple sugar syrup to taste. We like our limoncello on the sharper side so we add more puree.

Simply mix the lemon and sugar mixture in to the lemony vodka, and hey presto- Limoncello.

Store it in a fridge- it won’t last too long as it’s a great digestif on it’s own or wonderful in a cocktail- mixed with raspberry puree and sparkling wine, perhaps a sprig of mint. De-lish.
