Perfect for afternoon tea or just a sweet pic me up, try making jam tarts- easy and delicious. We made these this week for an afternoon meeting and they were devoured.
A very basic shortcrust will provide the perfect base, just add icing sugar will give you the twist on savoury shortcrust.
For 12 tarts mix 125 g of flour and icing sugar with 75 g of cubed butter, add 1 egg and mix until it becomes a smooth ball, wrap it in clingfilm and place in the fridge for at least 30 minutes.
When ready to use, roll out quite flat, and using a cutter, cut the tart rounds. Push the circles of pastry into a non-stick muffin tin, they should rise half way up. Place 1 teaspoon, or half a tablespoon of jam homemade or shop bought- into each case and bake for 15-20 minutes at 150 degrees Celsius. I used blackcurrant jam cos it reminds me of my grandmother. Use different flavours for different colours, and generally use a good quality preserve. It really makes all the difference.
